Fine dining runs on a rhythm that generic restaurant software never captures. A single cover moves through an amuse-bouche, multiple plated courses, a wine pairing, and a considered dessert — each fired to the pass on the sommelier's and captain's timing, not when a ticket happens to print. Guests carry allergen profiles, dietary preferences, VIP history, and seating expectations that must follow them from the reservation book to the table to the kitchen printer. Out of the box, Odoo POS and its restaurant features model tables, orders, and payments competently, but they treat a check as a flat list of lines. There is no native concept of coursing and firing, no structured allergen matrix tied to product variants, no pacing between courses, and no way to reconcile a tasting-menu prix fixe against à la carte substitutions on the same table.
This is where a typical off-the-shelf apps.odoo.com restaurant module also runs out of road: it bolts on delivery, self-order kiosks, or generic table management, but it does not encode the service choreography that defines a fine dining room. ECOSIRE builds a dedicated module that models these concepts as first-class ORM objects. We add models.Model records for course sequences, service pacing, allergen and dietary tags, and wine-pairing lines, with compute fields (@api.depends) that roll a table's coursing state up to a live pass display and flag allergen conflicts before a plate leaves the kitchen. Reservation records are extended with guest-preference and VIP fields that propagate to the POS session, so the captain sees the full guest context at the table. QWeb reports produce clean printed check presentations, kitchen firing tickets per course, and end-of-night covers-and-turns reporting for the floor manager.
Technically, the build ships as a proper Odoo addon: a versioned __manifest__.py declaring dependencies on point_of_sale and the reservation/CRM layers, security through ir.model.access.csv plus record rules so floor, kitchen, and management roles see only what their station requires, XML/OWL views for the POS and back-office screens, and ir.cron / automated actions for pacing reminders and no-show handling. Where you already integrate a card processor, a reservation channel, or an accounting localization, we wire them through Odoo's XML-RPC/JSON-RPC API rather than forking core.
