No. Variant assignment is deterministic and cookie-stable: each visitor is hashed into one arm and stays there across sessions, so a returning shopper never sees the payment order flip mid-journey. Existing gateway availability rules (minimum/maximum amounts, country restrictions) are always respected, so an experiment can never offer a gateway WooCommerce would otherwise hide.
